This position has become available due to the exciting opening of Harvey's Seafood Bar & Grill under the expert tutilage of our new Head Chef Gavin O'Rourke.

The ideal candidate for this position will have 2-4 years experience in a similar role. You must have a good attitude, be hard working, a team player and be willing to learn. You must have flexibility towards hours as straight & split shifts are involved.

 
You will be expected to perform sous chef duties, be passionate about food, cooking and your working environment. You must ensure that all food prepared is to the standards required in terms of food safety, quality and portion control. 

Primary Objectives

*To ensure the smooth running of the kitchens

*To assist the Head chef in maximizing the profitability of the food business

*To assist the Head Chef with design and implementation of new menus in all food outlets

*To ensure all Mis en Place is in place for service

*To inform the chef of any food ordering requirements

*To assist in the training of junior staff

*To ensure all areas are working as a team

*To ensure all guests receive a high quality meal.

*To lead the unified team with high levels of HACCP awareness.

 

 

Tasks, Duties & Responsibilities

 

  • To assist the Head Chef so that the kitchen operations run smoothly, working together with the service teams
  • To assist in the supervision and training of junior members of staff
  • To assist in the receiving and checking of deliveries
  • To assist in the ordering of food items when necessary
  • To ensure all food leaves the kitchen in safe sound manner.
  • To keep ones area clean and tidy at all times.
  • To adhere to our HACCP system.
  • To work as a team.
  • To respect all members of staff.
  • To attend training courses when required.
  • To adhere to health and safety regulations of the hotel.
  • To report any incidents/complaints to management.
  • To anticipate guest needs.
  • To complete relevant paperwork.
  • To report for duty on time and in full uniform.
  • To carry out your duties in a professional manner.
  • To leave your area clean and tidy for the next shift.
  • To carry out any duties as requested by the Head chef

You must have full knowledge of HACCP, a valid EU work permit is essential and speak fluent English to apply.
