We are looking to recruit a talented individual to assist our Head Chef. If you have previous Sous Chef experience in a busy hotel/ restaurant then we want to hear from you. The ideal candidate must be able to work off their own initiative and have excellent organisation skills with a relevant 3rd level qualification. 

Key Areas of Responsibility: 

  • To ensure that all areas of the kitchen are maintained to the standards required by The Station House Hotel.
  • To coordinate and execute training and to be able to motivate staff.
  • To maintain a safe, hygienic and healthy working environment.
  • To cook food on a daily basis according to business requirements for all food outlets and to have a knowledge of a wide range of European cuisine.
  • Write and check standard recipes for all dishes to ensure proper portion control, uniformity of taste and quality for approval of the Executive Chef.
  • To ensure that the high standards of cleanliness are maintained in all areas of the kitchen, such as machinery, equipment, floors and fridges.
  • To plan rotas on a weekly basis and to review on a daily basis with the Executive chef, overtime, rotas, holiday requirements and absenteeism.
  • To check on a daily basis food preparation, individual costs, quality, quantity inventories and portion control.
  • To attend meetings as required and update the Executive Chef on points raised.
  • Together with or in the absence of the Executive Chef, to hold monthly meetings with the Kitchen Staff.
  • To check daily function sheets, that all mason place is done and all ingredients are ordered.

The ideal candidate must have 5-6 years previous experience as a Sous Chef.
