Each year, our Quality and Marketing teams come together to explore the latest and emerging flavour trends from around the world, while also understanding the cultural and consumer behaviours driving them. Over the course of three days, the team tests more than 60 drink combinations to develop our annual seasonal drinks menu.

Ireland’s Coffee Scene
We begin with the basics: the current coffee landscape. Our commissioned research with Amárach Research Our commissioned research with Amárach Research found that 47% of people are drinking more coffee now than they were a decade ago. We know this shift is happening — but why?

For many, coffee has become about more than just the drink itself; it is increasingly tied to the café and social experience. Among Gen Z consumers in particular, meeting friends for cocktails has often been replaced by meeting for coffee. Social media has also played a major role in shaping coffee culture, with viral videos showcasing new café openings, trending drinks, and “must-try” hot chocolates driving consumer interest and behaviour.

When we explored the key trends shaping the drinks industry in 2026, several themes emerged:

Healthy & Functional Drinks
The demand for functional beverages shows no signs of slowing down. One standout example everyone will be familiar with is matcha, which took Ireland by storm in 2025, driven by growing consumer interest in its health benefits and slow energy release. Millennials and Gen Z consumers are also drawn to Matcha for its strong visual appeal and “instagrammable” aesthetic, making it as much a lifestyle choice as a beverage.

“Newstalgia” Drinks
Nostalgia is making a comeback… but with a modern twist. “Newstalgia” drinks evoke childhood memories while offering exciting, updated recipes on comforting classics.
Examples include:

  • Creative lemonade-based drinks
  • Playful flavour combinations
  • Desserts and beverages inspired by classics.

Tiramisu continues to grow in popularity thanks to its rich flavour, nostalgic comfort and multi-sensory experience.

Instagrammable Drinks
Social media platforms especially Instagram and TikTok are driving beverage trends more than ever. Today, a drink’s aesthetic is just as important as its taste. From vibrant colours and creative garnishes, consumers are increasingly drawn to drinks that are visually shareable online. In fact, 77% of Gen Z consumers globally report discovering new beverage trends through social media.

Tropical Escapism & Citrus Profiles
With Ireland’s unpredictable weather, zesty and vibrant citrus profiles are making a strong comeback. And we are calling it ‘Tropical Escapism’. Emerging as a key trend for 2026, these flavour profiles are enjoying renewed attention as consumers want to be transported to warmer climates!

You can easily tap into this trend by incorporating bright, refreshing notes into drinks and desserts, using ingredients such as lime, lemon or yuzu!
